This is comfort food that turns basic pantry staples and last season’s harvest ingredients into something rich, satisfying, and ready in a fraction of the time thanks to pressure cooking.

Original recipe credits to Dad Cooks Dinner, we have added our own twist on it by using game meat of our choice (we've tried it with deer, elk, moose, and bear!), and topping with coleslaw, and horseradish or dijon mustard.

Ingredients

1 tablespoon olive oil
2 pounds roast cut into large chunks
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon chilli powder
1 cup beef broth
Dijon mustard or prepared horseradish optional for added flavor
Buns for serving
Coleslaw for topping

How to Make Instant Pot Pulled Game Meat Sandwiches

1. Start by setting your Instant Pot to sauté mode and adding oil. Season the roast with salt, garlic powder, and chilli powder.

2. Sear the meat in batches for 2 to 3 minutes per side until browned. This step builds flavour so avoid overcrowding the pot.

3. Add all the meat back into the Instant Pot and pour in beef broth. Scrape the bottom of the pot to release any browned bits for extra flavour.

4. Seal the lid and cook on high pressure for 30 minutes. Once finished allow a natural pressure release for 15 minutes before manually releasing any remaining pressure.

5. Remove the meat and shred it using two forks. Stir in a few spoonfuls of the cooking liquid to keep the shredded meat moist and flavourful.

6. Serve the pulled meat on toasted buns and top with coleslaw for crunch and balance.

Tips for the Best Pulled Game Meat Sandwiches

- Use roast for the best texture and flavour
- Do not skip searing as it builds depth and richness in the final dish
- Let the meat rest in its juices after shredding for maximum tenderness
